Plums With Rum Prunes Au Rhum
Peel some nice plums, put them in a pan with a little cold water. At the first boil, take out the plums with a slotted spoon and put them in a basin with their weight in pounded sugar. Let them soak for 24 hours, then put them back on the fire. Let them boil and add one small glass of rum per pound of fruit when you take them off the fire.
After first cooking 2 lbs. of plums, put in water to cove with 2 lbs. granulated sugar. Boil in this liquid. then add 3/4 cup of rum.
